CI: Remove `ENABLE_PATH_CHECK` compilation
As `ENABLE_PATH_CHECK` is defaulted to 1 on other than DOSISH and
Cygwin, setting this macro to 1 on Ubuntu changes nothing from the
default. As for `ENABLE_PATH_CHECK=0` tests, we have real CI
platforms already.
